This dish never tastes the same twice because I use whatever vegetables I happen to have on hand and feel like chopping. I make this almost once a week because it’s quick and healthy and tastes even better the next day. I rarely measure anything so these are estimates. Feel free to adapt to your liking.

 

1 cup chopped onion

1 cup chopped red, orange, or yellow pepper

1 cup chopped broccoli

1-2 cups diced sweet potato or squash

2 cups baby spinach

1 Tbsp olive or avocado oil

 

Saute all vegetables until soft, season with salt & pepper. Set aside.

 

1 lb ground organic chicken, turkey or grass-fed beef

½ tsp minced garlic

2 tsp olive or avocado oil

 

Brown meat of choice in pan with garlic and oil. Season (I use Trader Joe’s Everyday Seasoning) Add back all the sauteed vegetables and mix well. 

 

Optional: Add ½ cup of bone broth at the end and allow to simmer for a few minutes, or add a cup of your favorite tomato sauce and some Italian seasoning for a different flavor.
